One of the restaurant's specialties is the use of "red vinegar rice," which is said to have been eaten since the Edo period (1603-1868).
Red vinegar is made by brewing sake lees, and the nutrients contained in the sake lees give it a brownish color.
Its flavor is more aromatic than white vinegar and has a mellow taste with umami and richness.
Sushi served with a sense of our commitment and culinary history is highly recommended for entertaining guests.

The counter seating in our restaurant is made of a single hinoki cypress board.
The walls are hung with Nishijin brocade fabrics that fascinate the world, creating an atmosphere that combines luxury and Japanese modernity.
